This dish closes the Greek week on my blog. I hope you will like it and try it at home! :)
My journey through the flavors of Greece ends and it was really nice to come back to them. You can believe me, very little is needed to make from a daily meal a quick trip to a small pub somewhere on the Greek coast.
See how simple it is!
INGREDIENTS (for 4-5 pieces)
- 2 chicken breasts (about 450g)
- 2 tablespoons chopped parsley
- 5 tablespoons of olive oil
- 2 tablespoons of wine or apple vinegar (or 3 tablespoons of lemon juice)
- 1 tablespoon of honey
- 1 teaspoon of dried thyme (or 2 tablespoons chopped, fresh)
- 2 cloves of garlic
- ½ teaspoon coarse-grained sea salt
- 1 teaspoon freshly ground whole peppercorns (or ½ teaspoon ground)
- frying oil
TO SERVE
- 8-10 cherry tomatoes (or 1 medium sized tomato)
- ½ red onion
- 1 tablespoon of parsley
- 1 teaspoon of wine or apple vinegar
- tzatziki sauce ( recipe ready in 10 minutes)
- pita bread (step by step recipe )
PREPARATION
Pour olive oil, vinegar or lemon juice, honey, salt into the bowl and mix thoroughly to combine all ingredients.
Add the chopped parsley, thyme, pepper and half-split garlic cloves and then mix again.
Clean the chicken from fat and pellets and cut into cubes about 2 -3 cm thick. It does not have to be perfectly even. :)
Put the cuted breasts into a bowl with marinade and mix thoroughly. Leave it in the fridge for 30 minutes.
In the meantime, you can prepare a tzatziki sauce and a quick, fresh salad.
QUICK RECIPE: Wash the tomatoes, cut into quarters, add to the bowl (a few are worth leaving to serve). Chop the onion into thin feathers and add ¾ of them to the tomatoes (the rest will be useful for decoration). Add parsley, salt, pepper, a teaspoon of wine vinegar or apple sauce, mix and it’s ready!We take the chicken out of the fridge and put on wooden skewers.
Preheat the pan over a high heat, pour the oil (to a height of about 3 cm) and warm it up. When the oil is hot, carefully put our skewers on it. You can gently move them forward and back so that they do not stick to the pan.
Fry the chicken for 2-3 minutes in a golden or light brown color, then carefully turn each shashlik and fry another 2 minutes. We put it on a paper towel for drainage and it's ready!
