Chocolate Cupcake Recipe
Makes about 18-20 cupcakes
Ingredients
- 1 1/3 cups flour
- ¼ tsp baking soda
- 2 tsp baking powder
- ¼ tsp salt
- ¾ cups cocoa powder
- 3 T. butter, softened
- 1 ½ cups sugar
- 2 eggs, room temperature
- 1 tsp vanilla extract
- 1 cup milk
- ½ tsp instant espresso powder (optional)
- 1 cup toasted coconut to decorate
Directions:
- Preheat oven to 350F.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cocoa powder. In a large bowl, cream together butter and sugar. Add eggs one at a time, beating after each addition. Mix in vanilla extract.
- Alternate adding dry ingredients and milk until mixture comes together. Mix in instant espresso powder, and fill cupcake liners ¾ of the way full. Bake for 15 minutes, then let cupcakes cool completely before decorating.
Buttercream Recipe
Ingredients:
- 1 cup (2 sticks) butter, softened
- 3 cups powdered sugar
- 2-3 T milk
- 1 tsp vanilla extract
Directions:
- Cream together butter and sugar until light and fluffy.
- Add enough milk to reach desired consistency, and mix in vanilla extract.
