Everyday Dal

dal ek sookha vibhaajan sem (daal) ke saath banaee gaee motee stoo ko sandarbhit karata hai. yah bhaarat aur paakistaan mein banaee gaee ek paaramparik pakavaan hai. yah aam taur par chaaval ya rotee aur paapad ke saath svaad ko badhaane ke lie ghee ke ek mod ke saath parosa jaata hai. jyaadaatar bhaarateey gharon mein, dala lagabhag roz bana rahata hai dakshin bhaarat mein bana daal ka maamoolee badalaav saambhar hai. sabase adhik daal banaane vaala daal hai jo ki toor daal ka upayog karata hai, jo ki sookhe vibhaajanit peele daal hai. daal ke any roop laal daal (masoor daal), moong daal, udad daal, chana daal aur poore beens (haree chane, raajama, chana aadi) ke saath bhee saboot daal ke roop mein jaana jaata hai.

aaj main mool daal nuskha saajha karana chaahata hoon jo ki poore bhaarat mein kiya jaata hai. yah uttar bhaarat mein daal tadaka ke roop mein jaana jaata hai. tamilanaadu mein, ise paroopapu kulmbu ya kilee potta saambar kaha jaata hai aur keral mein ise pipipu karee kaha jaata hai. yah mool tadake ke saath sirph saade pakaaya daal hai any kismon ko main bhavishy mein ek-ek karake saajha karoonga.

yahaan daal pahale naram tak pakaaya jaata hai. yah kuchh samay ke lie tamaatar, pyaaj aur kisee any sabjiyon ke saath bhee pakaaya jaata hai jo ki joda ja sakata hai. jab kiya jaata hai, ise sevaarat pakavaan mein liya jaata hai. ant mein bas seva karane se pahale, ek tadake sheersh par joda jaata hai tadake aam taur par ghee aur masaalon se bana hota hai jaise jeera, ashephotida, sarason ke beej, karee patton aadi. tadake bhinn ho sakate hain lekin bindu ko aakhiree minat mein tadake kiya jaata hai taaki svaad ke tel kee khushaboo jo tairatee ho sheersh par vaastav mein baahar khada hai. restaraan mein, daal tadaka kabhee-kabhee ek dhun ke saath bhee aata hai, jahaan daal ko jala lakadee ka koyala aur kuchh ghee ka upayog karate hue dhuen ke rang ka svaad mila hai.

daal phraee :
dal bhoon ke lie, ham masoor ko pahale khaana pakaane se yah bhee shuroo karate hain. pyaaj, tamaatar, lahasun ityaadi ko tadake tel mein talee huee aur phir daal mein joda jaata hai. dal phraee ya ek alag tadaka nahin ho sakata hai.

mainne neeche ke vistaar mein donon vidhiyon ko samajhaaya hai.

vidhi 1: (daliya bhoon)
daal ko achchhee tarah se pakaaya jaata hai, jab tak dahee ko paka nahin jaata hai, lekin lagabhag 2 seetee ke lie masaale nahin hai aur ek taraph rakhen. (paramparaagat roop se teer daal ka upayog kiya jaata hai lekin aap kisee any daal ya masoor ke sanyojan ka upayog kar sakate hain. yah har din svaad, banaavat aur dilachasp banaayega.)
ek pain mein tel garam karen aur sarason ke beej, jeera, karee pattiyon aur sookhe laal mirch ko chhidak den.
isamen hara aur haldee paudar joden.
agale lahasun ke lahasun ko baareek kadha daalen aur kam lau par bhoonen, jab tak yah bhoore rang ka na ho jae.
agala pyaaj joden aur thodee der ke lie kaat len. kuchh kata hua tamaatar aur sos joden.
pakaaya daal ko namak kee jarooree maatra mein joden aur sabhee svaad mishranon tak 10 minat tak pakaana. apanee vaanchhit motaee ke lie jarooree paanee joden
baareek kata hua dhaniya kee pattiyon, ghee ka ek gudiya joden aur band karen.
vidhi 2: (dal taadaka)
preshar pyaaj, haldee paudar, haree mirch, namak aur tamaatar ke saath daal ko pakaen.
2 seetee ke lie paryaapt paanee ke saath sab kuchh ek saath pakaana. not: - motee daal ke lie paanee ka saamaany anupaat 1: 3 yaanee 3 kap paanee 1 kap daal ke lie hai. yadi aap patale daal chaahate hain, to paanee kee maatra mein vrddhi karen
