Hello food lovers steemians,
a new italian recipe for you all, especially for the ones who loves seafood.. it smells like the sea of south of Italy.. so, cook it and enjoy!!!
1 hour 40 min Level: Medium Dose for 8 people
INGREDIENTS:
Squid 1.2 Kg
Aubergines 350 gr
Red peppers 250 gr
Zucchini 250 gr
Onions 100 gr
Salty ricotta 50 gr
Raisins 50 gr
sugar -
Marjoram -
Pinoli -
chives -
extra virgin olive oil -
salt -
PREPARATION:
Cut the eggplants, zucchini and peppers to dadins. Finely chop the onions and let them simmer in a saucepan with a spoon of oil, mix the drizzled vegetables, 200 g of vinegar, 70 g of sugar, 30 g of pine nuts, raisins and 5 basil leaves washed and chopped. Cook for 10 minutes with a lively flame; Finally salad the caponata.
Clean the squid perfectly, fill it with the caponata and close it by fastening the end with a needle. Heat an oil wire in a frying pan and plow the squid for 10 minutes, making them color over the entire surface. Cut the squids with washers and serve them with grated salty ricotta cheese. Decorate with some chives of chives and marjoram leaves
