Quinoa Risotto with poached egg

Hey Steemian,

I’ve told you in a previous post that I’m trying to eat healthier, but not forgetting the taste.
At my lunch today, I made this new recipe and it was a big surprise for me. This is more like a risotto, it takes less time, no wine and butter included, though I would love to eat a package of butter with fresh bread (guilty pleasure #99)

Ingredients
Quinoa boiled
Spring onion
Seed mix
Parmesan
Olive oil
Poached egg
Salt and pepper

In a large bowl, put the quinoa and mix it with salt and pepper, olive oil and parmesan.
Top it with some seed mix and poached egg. You can use also a boiled egg.

This is it! Hope you enjoy my healthy recipes. Actually, I am really excited about it because I cook a lot of new recipes and trying new combinations, I’ve never though about.
