After a nice day in the garden, it's time for a healthy meal.
Cooking in the Garden with @fraenk
Cooking a nice and healthy meal, doesn't require you to go inside into the kitchen. You can make a wonderful fresh meal with just a pan on a BBQ-Grill.
Stay outside and enjoy the wonderful summer evening mood for dinner... It's easy, quick and fun!
For this recipe, a separate small camping-stove, for the rice, comes in handy, but water will boil just as well on the BBQ, so that's not a requirement at all.
You can use just about any vegetables you fancy, and here's what we are using today:
Ingredients
- Rice
- Halloumi Cheese
- Olive Oil
- Cherry-Tomatoes
- Onions
- Zucchini
- Carrots
- Salt & Pepper
- Herb Butter
Prep Work
Boil some slightly salted water and add rice (2parts water - 1part rice)
Grill the Halloumi on the BBQ until it gets a nice crust (optional).
Cut all the vegetables and the cheese into snack sized pieces
Dice the onions and cut the cherry-tomatoes in halves.
Put some oil into a pan and set it on the BBQ to heat up.
DISCLAIMER: The pan will collect a lot of soot on the bottom, don't use a pan that you intend to use in your home kitchen again. Also, teflon and similar stuff is not recommended as the BBQ may get a lot hotter than your kitchen stove!
Step 1:
Fry the cherry-tomatoes and the onions first. You want your onions to get a nice brownish colour before you move on.
Step 2:
Add the rest of your vegetables and let them cook until they are nice and tender (don't wait until they are too soft)
Step 3:
Now add the cheese and start putting some salt and pepper too it, just the way you like it. It doesn't take much spices to make good ingredients taste well!
Step 4:
By now your rice should be nice an cooked, too. So go ahead and throw it into the pan as well.
Step 5:
You can add some home made herb butter in the end for extra flavour.
There you have it.

Whoaw, looks good! How long on the bbq till is all good? One I'll have to remember :)
Go by texture, not by time... the temperature on the bbq is hard to control, but for this one everything was done in ~40minutes
