HOW TO PREPARE A "PHOSPHORERA" TO MARGARITAÑO STYLE

Hello my dear Steemians, for today I want to show you the process of preparing a dish typical of the island of Margarita, located in the north of Venezuela. This is the famous "Fosforera" for those who do not know is a seafood soup, which is certainly special for all who love to eat this type of marine species.

This recipe gives us great nutritional value due to the amount of protein and phosphorus, great aphrodisiac qualities are also attributed to it due to the amount of seafood it has. Here in Venezuela they say that this soup is even capable of raising a dead person. The preparation of this coastal delicacy is laborious but very rewarding when it comes to taste. No doubt this dish is excellent to celebrate and share with family and friends.


Then I will show each of the steps for their preparation, it is up to each person to add the seafood that they love the most, you can even add fish, but in this case I will do it the way I like it:


Ingredients:

• 1 kilogram of shrimp.
• 1 kilogram of squid.
• 1 kilogram of crabs.
• ½ kilograms of scallops.
• ½ kilograms of chipi chipi.
• ½ kilograms of clams.
• 1 cluster of coriander.
• 1 fish head.
• 3 liters of water.
• 1 onion.
• ½ head of garlic.
• 1 paprika
• 2 sweet peppers.
• 1 bunch of garlic porro.
• 4 ripe tomatoes.
• Salt and pepper to taste.


Preparation process:

• Once all the ingredients are gathered, the first thing to do is chop all the vegetables, in small pieces.

• With respect to the tomato the seeds are removed, and its shell, and then chopped into very small pieces or grated.

• In the case of shrimp, its shell and head are removed, without discarding it because later we will use it.

• Then all the seafood under the tap is thoroughly minced and washed, without overdoing fresh water. As for the squid we must realize that there are no remains of its ink, and you should wash twice the scallops and chipi chipi, to remove the excess sand. The crabs if they stay whole.

• Add water in a large pot and let it boil, then add the fish and the shell and heads of the shrimps with the peeled garlic, onion, paprika, garlic, sweet pepper and tomatoes, letting it cook for about 45 minutes, in case it dries a lot you should add a little water.

• After this time the seafood broth is strained, discarding the solids and keeping only the liquid.

• In the same pot add all the seafood with the broth previously stored, adding salt and pepper to taste, allowing it to cook for approximately 15 minutes. When there are already about 2 minutes to turn off the kitchen, a little coriander is added.

• And it is ready to serve, with enough lemon and accompanied by an arepa.
