Good day and happy Saturday, foodies!
Some of you who have followed me for a while, might know i like good food and i like to cook myself. Now i like a good dinner in the excellent restaurant on the corner - best Fish & Chips in town, BBQ Boston butt or Smoker selection for couples, but on the weekends there is usually more free time, so why not experiment.
Originally, it was this recipe on Pinterest, that caught my eye, but who has tried slicing potatoes only a bit more than half-way through, knows how difficult it actually is.

But that looks super delicious, so i set out to make my own. While bacon and cheese make everything tasty, the flavour would be too bland by itself, so i try to introduce a topping of some sorts and my eye turns to surimi salad.
What you'll need:
- potatoes
- cheese
- bacon
- olive oil (or some other oil for cooking)
- surimi noodles
- light mayonnayse
- salt and freshly grated pepper
So after potatoes are peeled (experimenting without the skin this time), it's time to chop some pieces off them. Keeping the pieces, these will be delicious, when later mixed with the same fillings and toppings.
For this experiment a great deal of tin foil is needed. I wrap each potato separately and the pieces i cut out i wrap together into another tinfoil. Looking forward to your tips here, could i use one larger piece of tin foil for all of them?
Now we get to the seasoning.
Strips of cheese, bacon, a pinch of salt and pour some olive oil on top of it. I've been warned about using extra virgin olive oil for cooking so i use regular. If you don't like olive oil, i'm sure it can be substituted easily with rice oil. Top if off with fresh grated black pepper, for that i use the super tasty Tellichelly Black Pepper.
Remember not to use too much salt as the bacon is salty by itself. Use as much bacon & cheese as you like, but keep in mind that some of the cheese will stick to the tin foil.

So, while the potatoes are in the oven, it's time to mix up the surimi salad. It doesn't need many ingredients really, but i have a feeling it goes well with the potatoes - i'm looking for a contrast of hot and cold and a war of tastes. Anyway, just mix surimi noodles with some light mayonnayse. Light being the keyword here, as some of the supermarket mayonnayses are actually not that good. Find your brand :)
And after 30 or 40 minutes, depending on the temperature you cooked (doesn't really matter in my opinion), the potato-bombs are ready. The smell is nice already. Serve with the same tin foil and everyone can top it off with the salat. And all my guests can vouch for these turning out to be super de-liscious!
