Do you know something about moroccan cuisine? If not, then I'm gonna show you a simple but a delicious and healthy recipe. It's called "vegetable tagine".
According to Wikipedia, "tagine is a moroccan dish which is named after the earthenware pot in which it is cooked".
2 tablespoon vegetable oil
1 onion (grated)
2 garlic cloves (crushed)
3 carrots, peeled and cut in half
2 zucchini. quartered
2 large potatoes, peeled and quartered
1 teaspoon salt, or to taste
1 teaspoon ground ginger
1/2 teaspoon pepper
1/2 teaspoon turmeric
a handful of green olives
water
1 tablespoon chopped parsley
#How to Make It
- Place the vegetables in a bowl; add the spices and toss to coat the vegetables evenly.
- On low heat, in a large pot, drizzle the olive oil.
- Add the onion, garlic, ground ginger, turmeric, pepper, salt. Pour some saffron water and mix all the ingredients together.
- Arrange the vegetables: first the carrots, then the potatoes, then the zucchini.
- Add the parsley
- Add the olives.
- Place over medium-low to medium heat and bring to a simmer. It's normal for this to take 15 or 20 minutes.
- Adjust the heat to the lowest temperature. Allow the tagine to cook undisturbed for about one to one-and-a-half hours.
- Serve warm with some bread.
