Beets from the garden are so good

I picked my first beets today. As soon as I picked them I brought them in and washed them.

I wrap them in foil and bake them at 350 for an hour to 90 minutes depending on their size. When they are done I turn the oven off and let them sit for another hour to finish cooking. Then I rinse them under cold water and the skin peels right off.

I slice them in the glass container and put them in the refrigerator to cool (after tasting one of course).

In a day or two I'll eat them with a little salt and pepper or maybe make a salad by adding virgin olive oil, vinegar, and oregano. They have such a nice sweet earthy taste. Can't beet it haha. Thanks for reading.

Beautiful! I would have them cut in carpaccio, season with olive oil, little honey, lemon juice and salt/pepper! Then accompanied with either goat cheese or feta! Would be delicious!

Thanks for the tip. I like feta and I think that would go great with beets. The honey and lemon would be good too I bet.

Yes I agree they are very good warm too. I usually taste some right after they're done cooking and save the rest for a salad.

Oh yeah love the Feta. I can't have a salad without it. Love fried feta fresh off the grill. Nice looking beets. Wish we had planted some this year.

Run out and throw some seeds in today. You still have time.

Yes I did! And I think cooking tips in addition to everything else in your posts makes it complete! It's a fantastic blog you have and I think in time will be a real success. My friend's mother did a FB post called 'From Sheep to Scarf' (she lives on a farm and has a spinning wheel etc)... showing the whole process and it was fascinating. Yours reminds me of that now... from seed to stomach!!!

Thanks so much. I thought about putting more into what I do with my garden vegies but I'm putting a lot of time just doing garden talk right now. Once the season winds down I'll do some of my recipes but most of them are very simple.

Simple is best in my opinion, as even though complicated recipes are impressive, people are less likely to actually make them. The way you show simply how to use the veg you've harvested is perfect (but that's just my opinion!)

They look super yummy! I boil mine in a pot since I try not to use foil if we can help it.

Why is foil bad for you too or bad for the environment?

Nothing tastes better than homegrown! They look so good! I'm a huge fan of raw red beets in smoothies and salads! So yum!

I didn't know you could eat them raw. They're so hard.

I always julienne them for salads (spiralizing works too) and the other day we used it to make hummus too! Love the raw earthy flavor!
