Today's Sustainable Feast in the Garden of Eden

It is another fabulous day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!  


We made a delicious feast for our volunteers today on our wood burning stove rather than on the rocket stoves of our sustainable outdoor kitchen! We stayed nice and toasty, had a fantastic meal, AND heated water for showers for super sustainable efficiency. As usual, there was more than enough food for everyone, and we are happy to share our abundance with you!

Today we made a fantastic frittata feast!



We started our meal today with a great garden salad. We grow a huge variety of greens in our raised beds and also forage for wild greens like lamb's quarter when they are in season, so we have a great selection of leafy veggies every day. Not only do we pick a big salad for our whole community every day, but we also harvest a large basket to make super power green juice too!

We topped today's pile of mixed greens with sliced bell peppers, beets, broccoli, cauliflower, and sunflower seeds. Some of us like creamy dressings and top our personal portions with that; others like to have light vinaigrettes with a splash of our homemade vinegar and oil. We also have plenty of yummy sprinkly things like nutritional yeast, nuts, seeds, and dried fruits for creating a one-of-a-kind salad with every meal! 



For today's main dish, we made a couple different frittatas. Frittatas are a wonderful dish that we make often in our ecovillage. They are delicious and very easy to make. They can be scaled up or down depending on the size of your crowd. They are very versatile and are a great way to use up leftovers or any veggies, meats, cheeses, grains, or pasta you have a lot or a little of. We often have a lot of eggs from our generous chickens, so we usually have plenty of ingredients on hand to create a yummy frittata meal with minimal effort! 

This first frittata is a veggie version for our vegetarians. It has onions, roasted red peppers, sun dried tomatoes, fresh herbs like basil and oregano, cauliflower, green onions, pesto, and lots of cheddar cheese!



For our meat eaters, we crumbled the last little bits of our leftover bacon wrapped turkey meatloaf into scrambled eggs and mixed it with peppers and onions, herbs, green onions, and cheddar and swiss cheese.

 


As a side dish, we steamed one of our favorite veggies - spaghetti squash! This fun and unique yellow veggie naturally separates itself into strands of "noodles" when you cook it and then scrape the flesh with a fork. For a little extra flavor, we tossed it with olive oil, salt, pepper, herbs, chopped red bell pepper, and parmesan cheese.

 


We served some delicious sauces and condiments on the side. Here we have some creamy sour cream, guacamole, spicy salsa, and shredded parmesan cheese for extra topping and saucing fun! 



It was an epic, sustainable, delicious, nutritious feast, and we gave thanks for another day of sharing great food, good company, and an abundant, blessed life!

We do all of our cooking over fire, using wood that was otherwise destined to end up in a landfill! This is our indoor wood burning stove in action - it cooks our food, warms our communal space, and heats water for hot showers all at the same time!

Wow that salad looks so delicious. I feel like anything that contains beets can't be bad.

We have been including beets in most of our daily feasts for a few weeks and they have always been wonderful! They're a favorite food for many of us.

Totes. I fell in love with 'em after going on a camping trip with some chefs; they buried them in the hot coals and let 'em cook. Dust off the burnt skin and delish!

@gardenofeden nice to see you are creating sustainable food! I want to know more about homemade vinegar, is it healthier? I stopped using vinegar because I practice a more alkaline diet, I use apple cider vinegar occasionally.

Homemade vinegar is a very healthy alchemy, full of living microbes and enzymes that aid digestion and wellness in the human body. While vinegar is acidic, the way the body metabolizes it does not necessarily lead to a more acidic environment.

Besides growing leafy greens, do you grow the other vegetables you eat? Also, do you raise the animals you eat? What percentage of your food do you rely on buying at a grocery store?

We buy 0% of our food at stores and haven't for over a decade.
That is a significant part of what we do. Shopping at stores supports a system we do not find honorable nor agree with. Packaging, distribution, taxation, electricity, employee structures, the actual construction of the buildings - nothing about it is sustainable!

I love frittatas! I think I might pass on the beets though. Haven't acquired a taste for them yet.

Cast iron cooking is fun. One of my favorite aspects is it's easy to cook and clean up. Cook everything in one dish, and you're good.

Ooo yeah cast iron is a staple in our kitchen equipment! These are so durable especially if you take care of them properly, and are perfect for cooking over fire!

Over a fire, in a fire, in the oven, on the stove, the cast iron pan can do it all!
