Today's Sustainable Feast in the Garden of Eden

It is another great day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!  


We made a delicious feast for our volunteers today, and because we have below freezing weather we prepared the food indoors on our wood burning stove rather than on the rocket stoves of our sustainable outdoor kitchen! We stayed nice and toasty, had a fantastic meal, AND heated water for showers for super sustainable efficiency. As usual, there was more than enough food for everyone, and we are happy to share our abundance with you!

Today we made a HUGE feast!



We had numerous dishes for today's giant sustainable spread. We started by marinating a variety of meats! 

We marinated salmon 3 ways: with teriyaki sauce, in garlic and Italian dressing, and with garlic and dill. We rubbed an assortment of angus beef steaks including 2 NY strips with herbs, garlic, and salt. We prepared organic chicken sausages for grilling. We also stuffed jalapeño peppers with cream cheese and wrapped them in bacon! 



Our feast started with a giant salad. We piled lots of colorful grated veggies on top of mixed greens, including carrots, beets, red onions, broccoli, green onions, and cherry tomatoes!

 


We prepared most of our dishes on the indoor wood burning stove. On the left we have a creamy cauliflower casserole, and on the right we are sautéeing zucchini and yellow squash.



We made a bunch of steamed sweet potatoes. These are super simple, nutritious, and are a favorite food of almost everyone in our community!



We made a side of caramelized onions and mushrooms for lots of earthy flavor.



We heated some fermented sauerkraut to add tangy, healthy microbes to our meal. This is a classic pairing with sausage!



We made a second salad by dressing steamed beets with a citrusy orange dressing with ginger, salt, pepper, and olive oil.



We crumbled in feta cheese and tossed it all together! Dry feta pairs nicely with deep red beets; goat cheese makes an excellent substitute too.



Our cauliflower casserole turned out to be one of the favorite dishes of the whole spread! We finely chopped cauliflower and cooked it with carrots, onions, celery, and herbs and simmered it gently in heavy cream.



For another light side, we sautéed onions, mushrooms, zucchini, and yellow squash spears. It's nice to have a selection of raw and lightly cooked vegetables alongside something rich and decadent like our cauliflower casserole to treat the palate to a variety of flavors and textures.



Then came the parade of meats! We grilled up a huge selection on our outdoor wood burning grill. This is a platter of herbed steaks.



We grilled our salmon until it was flaky but still moist and tender. For a large crowd such as ours and with such an array of delicious dishes, our meat eaters chose to take a smaller portion of each type of salmon rather than have one whole filet to themselves. That way everyone gets to try a bit of everything! 



We rounded out the meat parade with hormone free, antibiotic free organic sausages! These are full of spices and wonderful flavors, and paired wonderfully with the sauerkraut!



Look at this amazing spread!! There was tons of food for everyone to have as much as they wanted, and we had a huge selection for our vegetarians, vegans, and meat eaters. We shared the meal in great company and gave lots of thanks for the ability to share our abundant blessings!


Food is important, and we hope to inspire people to really take time to eat, enjoy it, and share it with someone you love. We also hope to inspire more and more sustainable practices in regards to food! 



We do all of our cooking over fire, using wood that was otherwise destined to end up in a landfill! This is one of our rocket stoves in action - we built it by hand out of dirt.

the wood-cooked food has a super rich flavor, I applaud that work they do, the food looks too rich.
