It's a magnificent day in the Garden of Eden, and we're sharing a magnificent feast!
Because we want to be as healthy and happy as possible, we're back on our anti-candida diet! We intended to only follow the protocol for 3 weeks, but many of us are still testing positive for candida overgrowth. We're noticing great improvements in health every single day, so for us it makes sense to continue eating a foundation of fresh fruits & veggies with lots of leafy greens and squash while eliminating sugar, meat, wheat, and dairy for awhile.
There are so many awesome foods to enjoy, so today we had another delicious high vibe meal! We made raw zucchini "spaghetti", raw garlicky tomato sauce, colorful sautéed veggies, and flavorful basmati rice for everyone to eat as much as they want!
Zucchini "spaghetti" is one of our favorite treats, and it is super simple to make with a spiralizer! These have a texture and flavor surprisingly similar to traditional pasta, but it's way higher in vitamins & minerals. Zucchini has lots of B vitamins, fiber, protein, vitamins A & C, iron, magnesium, phosphorus, potassium, zinc, copper and manganese.
Plus, raw veggies are usually higher pH than cooked versions, and we're taking care to keep our bodies as alkaline as possible (learn more about that in our previous post).
These beautiful raw noodles call for a beautiful raw sauce, so we made a lovely tomato sauce with lots of garlic, onions, and fresh garden herbs! Garlic and onions are especially wonderful for enhancing, protecting, and maintaining health. They both have lots of sulfur, which optimizes DNA amongst other things.
We've got plenty of zucchini for a few different preparations! Here we sautéed these green squash beauties with more garlic and onion, peppers, and some yummy sun dried tomatoes!
We had some delicious basmati rice with saffron, cardamom, and bay leaves left over from our ethnic feast, so we reheated it on our rocket stoves for those of us who wanted some more carbs.

Last year (when we were still brand new to Steemit!), we were invited to enter the 15 minute food challenge to create a meal for one person in 15 minutes. We're big fans of raising the bar, so not only did we joyfully rise to the challenge, but we made enough food to feed our entire community in only 15 minutes, and of course we did all the cooking outdoors over fire on our hand built earthen rocket stoves!
