It is another incredible day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!
We made a delicious feast for our volunteers today, cooking over fire on our rocket stoves in our sustainable outdoor kitchen! As usual, there was more than enough food for everyone, and we are happy to share our abundance with you.
Today we made a huge Italian style feast!
We had a great garden salad, cheese raviolis with 3 kinds of sauce, meatballs, rotisserie chicken, pizza, and cheesy broccoli!
We started the meal with a mixed greens garden salad topped with sliced peppers, broccoli, carrots, cherry tomatoes, and dried cranberries. We love to incorporate at least one serving of raw, fresh veggies in every meal, and our daily salad is a primo opportunity to do that!
Each person could dress their salad as they chose. Here we have a salad portion dressed with sunflower seeds, slivered almonds, nutritional yeast, liquid aminos, homemade strawberry-mango vinegar, and olive oil!
Next, we made some delicious flatbread pizzas with mozzarella cheese, pepperoni, and sausage.
Then, we had a big bowl of broccoli with cheese melted all over it! This has been a constant in this week's menu rotation because #1 it's delicious and #2 we have lots of broccoli on hand right now.
We made a delicious, juicy, rotisserie chicken for our carnivores.
And we also offered a bunch of meatballs for anyone who wanted them! These are made with lots of garlic, salt, pepper, basil, oregano, bread crumbs, and an egg binder, then we cooked them in a hot skillet until crispy and brown on all sides.
We served a pot of cheese stuffed ravioli to stand as their own entree or complement our meatballs. These are a crowd favorite, and the children especially enjoy eating them!
We served another trio of sauces in our beautiful serving dishes! We have a dark green garlic basil pesto, a classic deep red tomato sauce, and a creamy parmesan alfredo sauce.
It was a great meal! It's wonderful to have plenty of hearty dishes in the wintertime like this. We do a lot of outdoor labor even when it's cold outside, but we get plenty of calories in delicious, sustainable meals like this.
