It is another incredible day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!
We made a delicious feast for our volunteers today, cooking over fire on our rocket stoves in our sustainable outdoor kitchen! As usual, there was more than enough food for everyone, and we are happy to share our abundance with you.
Today we prepared thick grilled salmon steaks, garlic chive mashed potatoes, sautéed peppers, green garden salad, and homemade applesauce!
Summer, winter, autumn, or spring, we like to start our dinners with a great big salad from the garden! We have relatively mild winters here in Texas; we have many days that drop below freezing, but don't get much snow or ice. This provides a great climate for growing veggies year round!
Our greens grow in raised beds we made out of discarded monster truck tires. When it gets especially cold, we pull clear tarps over them to trap in the heat from the sun and give them a warm, snug, and cozy greenhouse!
Every day we are blessed with the opportunity to walk outside and pick fresh vegetables from the land to make a delicious and wholesome meal with absolutely no packaging, distribution, advertising, manufacturing, taxation, or other retail expense. They are the freshest, healthiest greens and veggies around!
We prepared an easy side dish of sautéed peppers and onions over the flame of the rocket stove. It's great to have raw veggies in salad, but it also feels nice to have warm, cooked food when the weather is colder like it is in Texas right now.
Once again, it's mashed potato day in our ecovillage, and everyone was tickled pink! We love our potatoes, and mashed is a classic preparation that we all enjoy. We simply boiled potatoes, drained the water off when they were fork tender, and mashed them with some milk, butter, salt, and fresh garlic chives from the garden. Potatoes are often abundant, and this is always a winning dish for a crowd!
We grilled large cuts of salmon for those of us who like to eat fish. These thick salmon steaks were big enough for sharing! They were nicely cooked to flaky perfection.
For an extra special side dish/dessert, we made homemade applesauce too! It starts with a pot of peeled, cored, and chopped apples in water with a bit of lemon.
Then we cooked them down on the indoor rocket stove with spices like cinnamon, clove, and allspice. These are classic holiday spices that make the house smell marvelous as the applesauce gently simmers over the beautiful fire! We taste it several times throughout the cooking process to make sure it is sweet and spicy enough. You can add sugar, honey, or maple syrup to increase the sweetness, and may also enjoy a bit of nutmeg or vanilla if you want to try making it yourself!
When it cooked down to the texture we like, we took it off the heat and stirred in handfuls of fresh chocolate mint and pomegranate seeds for extra festivity!
The applesauce was perfectly delicious warm out of the pot, but it was an extra special creamy & delicious treat with a scoop of ice cream served over the top :)
This was a gorgeous and satisfying meal that we had a really lovely time sharing. Giving thanks to show the blockchain the food reality that is possible when we work together in the name of honor and sustainability!
