My Gazpacho soup

This dish I made as a second starter for a 4 course Tomato inspired dinner.

steps

  1. quater the tomatoes

  2. add finely chopped red onion

  3. add finely chopped red pepper and yellow pepper

  4. add finely chopped cucumber (seeds removed)

  5. add chopped garlic

  6. add pulled bread pieces

  7. add homemade mayonaise

  8. Add a drizzle of olive oil extra virgo

  9. blend this with your handblender

  10. run it through a fine mesh sieve

    Chill and serve with a selection of finely chopped cucumbers, pepperfruits, onion, hardboiled eggs, and other toppings to your liking
    I also made bread croutons for this dish

    toasted in the oven with a few pieces of smoked bacon Olive oil and provence spicemix and salt and pepper

    If you like it vegan or vegetarian you can easily eave out the mayo, eggs and smoked bacon ... this soup still rocks without them !
    Tomatoes are hot ....

Thank you, it is really great on a hot day ... sometimes I make it a day before so it draws more flavour and I freeze some icecubes from the batch to put in when serving it ...
