Antakya is my home city and it is famous for its gastronomy.
The cuisine of the city is a fushion of Turkish, Mediterrenean and Arabic cuisines.
Therefore, there is a constant feast of tasty dishes. :)
Babagannuch is a typical side dish (meze as we call it).
And it is very easy to prepare it.
Since it is common in all the region, there are of course different recipes according to the taste preferences.
Here is mine:
Ingredients:
1- 4 tomatoes
2- 3 eggplants
3- 3 green peppers
4- A clove of garlic
5- Olive oil
6- Salt
7- Pomegranate juice (if hard to find, use lemon juice
8- Cumin
How to prepare:
a. Grill the tomatoes, eggplants and peppers. When sufficienly grilled, peel them all.
b. Chop all of them and mix them.
c. Smash the clove of garlic and add it to the mixture.
d. Finally add the cumin, pomegranate juice, salt and the olive oil.
