I regret to admit that I have heard / seen this somewhere. It was either a cooking show or commercial advertisement. I did not watch the show or further research the ad.
This was a good description with pics. Very good job @plumey and it looks delicious. Thanks for sharing. I have a new outlook on this cooking method.

You're right, they're certainly not new but the results are outstanding compared to a normal roast.
