As a big fan of Eggs Benedict, I really struggle to find a place in Chiang Mai that can make this dish correctly. I found a spot that specialized in "late breakfast and brunch" and the Eggs Benedict is featured prominently on both their menu and advertising materials. The pictures looked fabulous and i decided to give it a go. I was let down badly again.
First off, I do realize that this is in fact eggs Florentine and not eggs Benedict. There isn't much difference between the two other than the fact that Florentine has spinach and Benedict typically has ham.
At this point i was impressed because it actually ended up looking like the pictures on the menu, so we were off to a good start. However, almost immediately i was let down as the most crucial part of making this dish what it is supposed to be is by properly poaching the eggs.
When you chop into the egg it should be a near explosion of runny yolks, thereby covering the rest of the dealio in runny gooey deliciousness. However, they screwed this extremely important part of the process up.
While English Muffins are an extreme rarity over here and i don't expect to receive that, i do expect the bread to be toasted and not chewy. This bread was chewy and actually quite difficult to cut. There were times i was fearful I was going to accidentally make a piece go flying across the restaurant.
The "nail in the coffin" for this dish was the hollandaise sauce, which was bland and kind of seemed like it was an instant mix rather than made on site.
I'm starting to think that I am not going to get this dish made correctly and was even starting to feel as though I could be in the wrong about how this dish is actually meant to be. However, as luck would have it, a friend of mine who is a professional chef met up with us about halfway through my meal. He confirmed that my expectations of the dish are correct and he also felt the hollandaise was not good at all.
So this was a disappointing experience yet again and the search goes on for a proper eggs benedict / Florentine. I can't really recommend this place but it is called Giottos and is located in northern Chiang Mai
How come I have never had egg Benedict in mind when in Thailand.. Hope ข้าวไข่เจียว grows on you so you don't have to have the difficulty finding a good one 8-)8-)8-)

Oh! sure you never tried it with sticky rice. My grandma did that once and whoa! crazy.. Though, the kai jiow itself need to be a little more salty than usual. Super yum and oh! you really read the word !! lol
told you i can read stuff :P but i am all but useless on typing in Thai. Forget that.
try smoothie blues and also rustic and blue. Not so cheap, but it worths...

I never really thought about where the name comes from. Eggs Benedict are an indulgence, that is for sure. No one NEEDS a breakfast of this caliber... haha. I think i need to take @waybeyondpadthai 's advice and just go for the local dish that Thai people excel at making :)
I had poached eggs this morning, as a matter of fact - I learned how to make them yesterday via videos on YouTube. Mine are worse than the photo lol - the search continues in my house as well lol
yes, it is a very difficult process. One that I wouldn't attempt on my own and this is why I order it at a restaurant. If your chefs don't know how to make them either that is fine... but don't offer a bunch of dishes that feature these difficult to make eggs if you can't do it :)

just today I asked my Mom if she could cook such magic eggs, and her reply was -no, what is it, why do you need them?
actually, I can't say I really need them;) But I am really inrterested in them! I saw this recipe in the book I was reading some days ago, the autor is loved and respected by me, and he praised these eggs very much. So it's not strange that I started to look for this recipe and even tried to make it once and....failed completely..:( it seems to be so easy, but in fact, there is some magic in these eggs for sure! I will try once more and tell you about my results;))
yeah, the process of cooking an egg in water is truly a gift and that is what makes this dish so special. When i get judgemental towards the chefs it isn't because I think I can do better. I can't do it at all. :)

I've never had eggs benedict, but it seems interesting to me. I think my wife had something really close to it one time which is actually surprising because she doesn't really eat ham or runny eggs. She only eats them hard boiled or scrambled.
