BLACKBERRY APRICOT & FIG PIE

This morning as I woke up, I woke up to this! My wife had woken up 2 hours before me and had decided to pick some fruit from our garden. Knowing I would eat it all, it wasn't the best thing to show me for breakfast. But instead of eating it immediately I decided we needed a few proof photos and the recipe so I could post it.
Ingredients:
750g pitted apricots (or ready made jam to make things faster)
4 Spoons of Sugar
1 Spoon of Maple
1tbsp of Lemon Juice
1tsp of Agar agar
1 round vegan puff pastry (almost every supermarket has this)
Enough blackberries to fill your pan
3 Figs
zest of a lemon
Directions:
1.Chop the apricots in to chunks
2.Place them in a non stick pan with the lemon juice
3.Add the sugar, maple and agar agar
4.Stir and cook over low medium heat for ca. 30 min. (Time can vary depending on the ripeness of the apricots.)
- Once cooked let them cool
- Prepare the pastry in a baking pan on baking paper.
- Pre-heat the oven at 180°c or 360°f
- Spread an even layer of your now cooled apricot jam.
- Slice the figs.
- Now all that is needed is to add your berries and figs on top of the cake.
- Place in oven for ca.25 minutes till golden brown on the edge.
Voila! Now snap a camera and show off your work of art to your family and friends.

I would definitely add the names of the food creators and give them credit, not to mention that you should ask for their allowance as I think you might unwillingly get yourself in to a lot of trouble taking peoples work. I know that it can cost some people $20.000 for copyright. So triple check before you go any further as I wouldn't want anything to happen.
