Crispy waffles vs. fluffy waffles? I like the looks of your crispy waffles. And tnot having to make them sweet. It's more like 'waffle' as a method of cooking, rather than a type of food. And that would be a great use for leftover sweet potatoes. Might as well cook a batch of them in anticipation of using them, somehow!
