Cassava sounds like an amazing plant! I would try the chipsacitos, for sure! How do they store that stalks to protect them from the cold, so they can use them to start new plants the next season? Is the processing into flour complicated? Thanks!

The stems of the plant are kept standing and covered with yuyo or grasses to cover it from the cold. To make the flour is very simple as we see in the video.
