One question, does this process produce alcohol in anyway using veggies.
I wasn't sure, so I looked it up. Seems during fermentation, the bacteria change the sugars naturally present in the veggies into mostly lactic acid, but also partly into alcohol. I don't know how much percent, and when you eat fruits that are overripe even those contain some alcohol. So I think you'd have to research according to what exactly is important for you :).
