Hi everyone. Today I have made my Italian Tuscan Chicken Kabobs with rice and veggies. There's hundred different ways to make your kabobs. My husband likes just chicken and mushrooms on his, but you can use onions, green, yellow or orange peppers as well as baby tomatoes. The list is endless.
First I cut up my boneless skinless chicken breast into quite large pieces and marinate the chicken for 2 days in my Italian tuscan marinate. You need the following ingredients:
-a little mayo
-vinegar
-water
-lemon
-olive oil
-garlic
-oregano
-basil
-black pepper
Once your chicken has marinated for as long as you like. The longer it marinates the better it taste. And get your veggies ready.
Take skewers wipe them with a little oil so the meat and veggies won't stick. Next start layering 1 piece of chicken and 1 mushroom. Keep loading the skewer back and forth until all your chicken and veggies and ready
Spray the foil with cooking spray so they don't stick. Place in oven for about 20 minutes, turning oven half way through cooking process. These are also great cooked on the Bar-q.
