I don't know about you guys, but when summer gets here to South Florida, I start eating Salads every day. My appetite goes down a lot due to the extreme temperatures here and I just want to eat refreshing cold salads. This is a recipe that I put together on the fly by just glancing at what I had available in the fridge and just ran with it. I love the contrast of the salty feta cheese with the sweet and tart dried cherries.
Ingredients:
1 Diced English Cucumber
1 Haas Avocado
1 lime
4 Roma Tomatoes
1/4 cup of minced fresh Basil
1/4 cup of Fetta Cheese
1/2 cup of diced Red Onion
1/4 cup of dried cherries, cranberries or raisins
3 tbsp of Extra Virgin olive oil
1/2 teaspoon of sea salt
Ok so now we are cutting the cucumbers in half and removing the seeds with a spoon to remove all that excess water that ends up watering down the salad. Then cut them in small strips then accross into small little squares. All of the veggies should be cut uniform in size like this.
Once you are done chopping everything up, place all of your ingredients in a large mixing bowl and with a large spoon give it all a good mix. After its is all mixed thoroughly you can serve or chill in the fridge for 10 minutes then serve. This salad has got so much amazing nutrition in it and it is really eefreshing and perfect for these hot summer months. π₯πͺπ¨πΌβπ³π
