Looks beautiful, this is one of my favorite ways to eat seafood. Here in Florida Ceviche, Poke and Sushi are all really big since we are on the coast. The sesame oil gives food such an amazing flavor, especially combined with the soy sauce and some acidity of lemon and lime. I usually mix in lime juice with my soy sauce when ever I eat sushi, like a home made ponzu sauce, the addition of the honey was an awesome idea also to add a little sweetness for contrast with the acidity and saltiness. I love the addition of the arugula and lemon wedges in there also. Although I cant stand the taste of arrugula, I am happy to see it as garnish lol.
