You can eat them, but a lot of the sweet taste will not be there as it is fueling that plant. Your best bet is to stick them in the ground and you will get tons more of them from those sprouts. I have a ton of plants in my yard from the same accident lol.

You are very welcome. Here in Florida they grow all year round. If you are some where colder you may have to plant them at the beginning of spring. In the winter the plants will die but will resprout again in spring and continue giving you Sweet potatoes. You just have to dig them up when u want some. Best part is that they will be organic. :)
