This must be the one ting that I make the most in the kitchen. I'm always a bit frustrated when there's no more compote left in the fridge, and then I just have to make some more... The compote can be made with many different fruits. I've made many variations, but this is my favorite and I'll share the simple steps in how to make it with you.
First, the ingredients, not a very long list...
6 Apples
400g frozen strawberries
And this is how you do it... Peel the apples and cut them into dices, put them in a casserole. Add the frozen strawberries.
Start by putting on low heat to allow all the fluids come out of the fruit and the strawberries melt. Use a lid. Then bring it to boil and let it simmer.
After the fruit is soft, remove the lid so that the liquid vaporizes.
Then let it cool down for a little before you use the hand blender to make it into a smooth compote.
I then prefer to put the compute in the refrigerator before serving and the easiest way to serve it is just bare, or with some vanilla quark.
I also use the compote the same way I would use regular jam, and it's delicious in for instance crumble pie.

Thanks! I usually eat it within 2-3 days when kept in the fridge. If I’ve made more than I think will be eaten within the next few days after making, I make portions that I put in the freezer. Sometimes I do make larger portions just to have back-up for later😊
