To de-stresss, I spend my free time doing the things I love and cooking is one of them. I love Italian and Mexican food. I was supposed to make Bruschetta for dinner but I didn't have the ingredients. Checking the freezer/fridge and cupboards, I found Quorn mince, cheese, an onion, mushrooms, yellow pepper, tomatoes and taco mix, so I decided to make tacos instead to go with the home-made buttersquash and lentil soup.
In a low heat, pour a bit of olive oil in the frying pan. Once the oil heats up, add the onion and stir occasionally for 2 minutes.
Next, add the pepper.
Followed by the mushrooms
Then, the Quorn mince (or tofu) and stir occasionally for 5 minutes.
Finally, add the taco mix (cumin and paprika) with half a cup of water. The taco fillings is ready in 2 minutes.
Fill the taco shell with the fillings and fresh tomatoes (and lettuce). Sprinkle with cheese and serve.
