Hello my friends,
First of all, I'd like to say Happy New Year to you all! I'm wishing you a year full of happy days! :-)
To start the year 2018, I'd like to share with you the last cake that I made on 2017. Well, it's actually not the last one, it's the second last :-D I made this cake last week end for my brother in law's birthday. I actually wanted to make him a chocolate cake but since he has a 2 and half year-old son and he can't eat chocolate yet, I opted for something simple yet tasty so I went for Victoria Cake. I decided to add some fresh fruits to balance out the sugar. Luckily, I could still find some fresh mixed berries in the supermarket. If you cant find the the fresh one, frozen berries work too.
Victoria Cake
Ingredients
for the cake
- 200 gr granulated sugar
- 200 unsalted butter, softened at room temperature
- 4 large eggs
- 200 gr self raising flour
- 1 tsp baking powder
- 2 tbsp milk
for the filling
- fruit jam, I used mixed berries jam
- Vanilla Swiss Meringue Buttercream, I used half of this recipe
for the topping
- fresh mixed berries
Directions
- Preheat oven to 170°C, grease and flour two 20 cm pans. Set aside.
- In a small bowl, mix the flour and baking baking powder, set aside.
- In a bowl of a stand mixer fitted with paddle attachment, mix the butter and sugar for about 2 minutes or until creamy. Scrape down the bowl.
- With the mixer running on low speed, add the eggs one at a time then add in the flour gradually.
- Add in the milk, mix well.
- Divide the batter equally into two pans, bake for about 20 minutes or until toothpick comes out clean.
- Leave it to cool completely before decorating.
Assembling
- Put the first layer of the cake in a serving plate, top with buttercream then add the jam on top it.
- Stack the second layer on the first one and decorate with the rest of the buttercream and fresh mixed berries.
- Sprinkle with some powdered sugar if you like.
Like always, people were happy and liked my homemade dessert. As an amateur baker, it always feels great seeing the people, for whom you make the dessert (or any food), happy. It's my true happiness.
I hope my baking skill will improve this year so I could focus on planning my future project: having my own cake shop. It's not in the near future though but I have to start to work on it no and there are still a lot of things to learn. I'm so motivated for that. Wish me luck! Nice cake @ikaputri3. Can I change the topping with other fruit? Maybe a banana?
Normally there's no topping on Victoria Cake but I dont see why we cant put sliced banana on top :)

Many thanks for you kind words @samanthajbarnes! Compared to the other cake that I've made, especially the three tier wedding cake, this one was simple. It doesn't always come easy but there's always a way when we are passionate about them.
