Chicken Breast Cake with Jasmine Rice and Mayonnaise Corn Salad

Ingredients for four people

For the Chicken Breast Cake:
1 kg chicken breast
400 g of shredded mozzarella cheese
flour and eggs to the crumb
300 g of bacon

For the Mayonnaise Corn Salad:
Two cans of corn
150g of sour cream
Four spoons of mayonnaise
salt and pepper


I had prepared the salad a day before I started the meal because it is nice if you have the flavours combined nicely, which takes time.

Slice the chicken into 0.5-1 cm slices, wash and then put them on a plate to salt those lightly.

Place the bacon in an oven pan, as you see on the following picture.

Then scatter it with the cheese.
Dust the chicken slices in flour.

Shake off excess, then coat in beaten egg. Place those in the pan in one layer.

Cover it with cheese and repeat the crumb until you run out of meat.
Cover the pan with cheese and fold the bacon back on the top of the cheese.

Bake it for about 40 minutes. The meal is ready when the bacon is gold and crispy.

I cooked the rice in coconut oil while the meat was in the oven. Additionally, I steamed broccoli, because it is not only delicious it is also healthy.
