There's so much that we like about the culinary delights of Aceh. Uniquely, this one country seems to have its own uniqueness compared to its neighbors which have more Malay and Peranakan flavors. One of the things that is unique is the presence of fried Acehnese noodles, a mix of flavors from various cultures that are difficult to find equivalents in other countries.
It's no wonder that Acehnese restaurants are mushrooming in many big cities in Indonesia. In addition to its varied and delicious menu, Aceh cuisine is indeed suitable to be enjoyed while relaxing and mingling. So do not be surprised if typical Acehnese restaurants accommodate a comfortable atmosphere for lingering. In addition to low chairs that are relaxing to enjoy the cool cool air, there are also many snacks that can be shared together.
The way to make it yourself is fairly easy, it's just that you have to prepare a variety of basic spices. Slightly chop, slice, and pickle; then the rest of the fried Aceh noodles only need to be seasoned and cooked until cooked.
The main ingredient
200g wet yellow noodles
75g beef tenderloin, diced
4 cloves of garlic, thinly sliced
3 red onions, thinly sliced
1 tomato, roughly chopped
200 ml of air
3 tsp salt
50g sprouts
2 tbsp Sweet Soy Sauce
½ tsp salt
1 tsp sugar
½ tsp cooking vinegar
4 tbsp vegetable oil
1 spring onion, thinly sliced
1 tbsp fried shallots
Ground spices
6 grains of red onion
4 cloves garlic
1 cardamom pod
4 large red chilies
2cm turmeric, grilled
¼ tsp cumin
½ tsp white pepper powder
Pickled ingredients
1 cucumber, seeds removed and diced
5 red onions, thinly sliced
1 tsp sugar
1 tsp cooking vinegar
½ tsp salt
How to make
Blend all the spices using a blender or mortar.
Heat oil in a pan, then add shallots, garlic. Sauté with the ground spices until fragrant, then add the beef. Stir well, cook until the meat changes color, and the stir fry is cooked.
Add bean sprouts and tomatoes. Cook until lay, then add salt.
Add noodles, then sprinkle with green onions. Stir until well blended then remove and turn off the heat.
Serve Aceh fried noodles with pickles and sprinkle with fried onions.
