So, to follow up on my previous post about the Skinny Mexican Chicken Bake:
The prep was simple. The cook time was quick. The result was DELICIOUS!!!
Honestly, I cant believe this was low calorie AND low carb AND high in protein!! This was DEFINITELY a win!!!
The ONLY thing I did differently than the recipe given was I used reduced fat shredded nacho mix for the cheese rather than alternating the 2 cheeses and I added whole kernel corn. The corn may have slightly upped the calorie intake by a smidge but not enough that it would make a significant difference.
The serving size they list is 1.5 cups and I dont even think the piece I cut out was even a cup worth and Im actually full. Which is great because I have been SO hungry, regardless of what I have ate lately because there has been next to zero carbs or anything to help tide me over.
I highly suggest this meal! The cost is decent, the prep is easy, the cook time is quick, its delicious and best of all...
ITS GUILT FREE!!!!
