Mama’s Mahamri Recipe (with secret ingredient)
Hey everyone!
My Mom would make these every Sunday for Breakfast so I thought why not share it?
Mahamri’s are usually accompanied with a lovely cup of tea or “Chai” as Kenyan’s would say.
They are also delicious alongside some “mbaazi” (pigeon peas cooked in coconut milk) for a more filling Breakfast.
This wonderful treat is most popular along the coastal region of Eastern Africa and is a Kenyan favorite.
I hope you enjoy!
INGREDIENTS
2 Cups Flour
4 Tbsp Sugar
1 tsp Instant Yeast
½ tsp Cardamom powder
1 Tbsp Oil (Secret ingredient)
Powder Sugar (lightly dusted over)
Coconut Milk (enough for Kneading)
DIRECTIONS
Mix dry ingredients first, add oil and mix.
Knead with warm coconut milk, a little at a time to form a soft yet firm dough, it should not be sticky.
Set aside in an airlock container for at least 1-2 hours, to allow the dough to rise.
Once the dough has risen, divide into palm-sized sections and using a rolling pin, roll out each palm-sized section into ¼ ’’ thick circles.
Using a knife carefully cut the circle into equal halves.
Cut each half a circle into 3 somewhat triangular shapes.
Deep fry over a moderate heat for about 2 mins each side; they should puff up and have a golden or slightly dark brown color.
To finish off, dust some powder sugar over the top through a sieve and serve.
