How to be VEGAN in a COLLEGE DORM

Hi, all!

I'm so excited to be a part of the of the Steemit community. I think this site is going to change the way the economy and internet interact.
Anyway, I've been food blogging on Instagram for a while now, but I've recently had to deal with the change of going from a fully equipped kitchen to a college dorm with no access to a kitchen whatsoever. All I have is a mini fridge and a microwave- that's it. So I thought what better time to start talking about how easy and affordable it can be to be vegan, even when you're kitchen-less? To start off this new account of mine, let me share with you my go-to breakfast every morning: the easiest oatmeal ever, not to mention insanely healthy and delicious. At home I always made my oats on with almond milk on a stovetop, but adjustments had to be made, for the sake of my wallet and because of the lack of stovetop.

These oats are hearty, filling, delicious, warm, creamy and HEALTHY! Everything you could ever want in oatmeal!

Ingredients:
3/4 cup instant oats (if you like a little more texture, do 1/2 cup instant and 1/4 cup rolled)
1/2 cup frozen blueberries
1 tbsp chia seeds
1 scoop of Amazing Grass pumpkin spice powder*
Cinnamon to taste
Optional: Apple pie spice to taste
Optional: Sliced banana (for extra sweetness)
1 cup water

1 tbsp cacao nibs
1 tbsp hemp hearts
1 tbsp pumpkin seeds
1 tbsp almond butter

*This powder is a little pricey, so if you want you could add stevia, maple syrup, or agave for sweetness instead! If you don't want it too sweet and you're already adding a banana, you can omit it all together!

  1. Put the oats, blueberries, chia seeds, Amazing Grass powder (or other sweetener), spices, and the (optional) sliced banana in a microwave safe bowl and mix it all together.
  2. Then add in your water and stir it all up until it's well combined. Adjust the amount of water to your liking (may need a little bit more if you like oats runnier, or not if you like them thicker).
  3. Microwave for 2-2.5 minutes until the water is absorbed into the oats.
  4. Take them out and stir them. If you need more water, you can stir some in and they will still absorb into the oats- no need to re-microwave.
  5. Top with what ever you have on hand, but I recommend some more blueberries, cacao nibs, pumpkin seeds, hemp hearts, and a spoonful of almond butter. If you have left over banana, it'd be delicious as a topping, too!
  6. Enjoy!

I like these oats because they're so versatile. You can top with almost anything and it'll pair so nicely with the slight sweetness in the base of the oats and the warm blueberries. It's so easy to adjust this recipe to your sweetness preferences, spice preferences, fruit preferences, etc. And it's such a fast meal- takes less than 5 minutes from start to finish. You can also put them in a mason jar and take them with you to school or work or wherever! They'll keep you satisfied until lunch, and you'll wake up the next morning craving more!
