In Mexico City the weather is still rainy and the rain is accompanied by cold, so prepare a delicious Aztec soup that is eaten super hot.
The Aztec soup is also known as tortilla soup, is a very typical dish that is eaten throughout the Mexican republic.
Here I left you the recipe!
Ingredients:
250 grams of corn tortillas
30 grams of chile pasilla
200 milliliters of vegetable oil (or needed)
500 grams of tomato
1 clove garlic
100 grams of onion
500 milliliters chicken broth
salt to taste
150 grams of cheese type panela (or gratinable type)
50 grams of acid cream
100 grams of avocado
Preparation:
Cut the tortillas into thin strips and cut the chili into thin rings.
Heat the oil and fry the tortillas until they are browned. Drain excess oil onto an absorbent paper towel.
Fry the chile rings until they are browned, drain excess oil.
Blend the tomato with the garlic and the onion.
Heat the oil, strain the sauce and fry. Add the chicken broth and mix until completely integrated, season with the salt.
Serve the broth, add the tortillas and decorate with the cheese, the cream, the chile and the avocado.
Tips:
- When serving the dish add the tortillas and cheese first in the dish and add the very hot broth to melt the cheese.
- Be careful not to burn the peppers because they can sour your preparation.
