Hi Friends,
After eating junk food the other day, I am back to eating my normal diet of less complex foods for a clean, mood enhancing vibrancy. I love to eat a mixture of sweet and bitter foods every day, making for a tantalizingly tasty lunch in the garden.
Ultimately I aim for a high raw diet, but in the UK, it doesn't always work out because this is not always the tropical climate that demands high water content foods, and the fruit quality is not always the highest!
So today I comined my dish with steamed Kale & Lemon, Fried tofu & Sweet Clemantines, (garnished with tiny forgaged wild strawberries - these little beauts were bursting with flavour), and in the lower left corner I have Courgettes (Zuchini) on Celery & Pak Choi salad leaves, garnished with Nori Sea-Weed Sprinkle for that all-important DHA for brain function that vegans can miss out on.
The Celery and Pak Choi are two good summer vegetables because they provide the body with natural salt that is vital for body functioning especially during hotter months. All plant foods contain protein so vegans have abundance of it - and this lunch is low carbohydrate too, so would also be appropriate for those who are interested in eating a Vegan Ketogenic diet.
The courgettes have been lightly 'water-sauted' in vegan stock here so that they remain a little raw and for want of a better word - 'textured'. The stinging nettles were foraged from the garden for their high iron and calcium, and hormone rebalancing ability.
When it comes to simple uncomplicated dressings, I find that lemon juice, mustard, and raw organic cider vinegar work - sometimes a little added coconut sugar makes is pleasantly palatable, together with a drop of avocado or hemp oil.
Organic cider vinegar is great during the summer as it helps me to combat the symptoms of hayfever. It is also said to heal the stomach - the gut being where most of immune system is situated.
So enjoy the combination of sweet and savoury, we can cleanse our bodies, raise our energy, and I guess it keeps us looking young at 50! :)
