In my visit to the city of Caracas, at my aunt's house we decided to make a sauce of fried tomatoes where they can be given many uses when cooking. As well as meats, whether steak, stew, ground, spaghetti and even if you want to make pizza at home, this sauce would be very good. In short, many uses we can give to this sauce.
That's why I want to share with you this good recipe and simple to make at home, that you will surely enjoy doing it and if it is a much better family. Here I leave the photos of the step by step and the ingredients that were used.
Ingredients:
- 8 kg of ripe tomatoes
- 4 onions
- 1 head of garlic
- 1 large paprika without skin
- 2 garlic joints
- 4 scallions
- 2 tablespoons of sugar
- 1 tablespoon of salt
- Bay leaves
- A touch of basil and oregano
Preparation:
Chop the onions, paprika, garlic cloves and scallions in small squares.
Make cross cuts on all tomatoes before boiling them to make the chipping process easier.
After making the cross cuts, in a pan with water, sauté the tomatoes for 15 or 20 minutes.
Once the cooking time has elapsed, all the tomatoes are peeled on a colander to drain the excess water, then crumble them and remove the roots.
In a mortar, crush the garlic head.
In a pot unite everything (tomatoes, onions, paprika, chives and garlic already chopped). Also add bay leaves, basil, salt and sugar. Let cook over low heat for two hours.
Sterilization of the containers:
Boil the jars and lids for 20 minutes. Then let them rest for 15 or 20 minutes more.
Filling the jars with the tomato sauce:
With a scoop, fill all the jars to the top, close them well and place them face down to start the emptying process.
In a pot with boiling water place a cloth in the bottom and put the jars upside down. This is to avoid movements of the jars and that can break. Let them boil for 30 minutes to complete the emptying process.
The final result is the packaged sauce ready to be refrigerated after it is reposed and where it can last for months and preserve the flavor.
