I present to you a belly filling Scrambler, packed with all things good to start your day.
First
BACON
and lots of it!!
I went with 1-1/2 packs of bacon and cut into chunks using kitchen scissors. This has to be the easiest way to get nice bite sized chunks of bacon to add to any recipe.
Cook the bacon until it is about 1/2 way cooked. Then cut some potatoes into about 1 inch cube. Any kind of potatoes will work, we like red potatoes.
Also chunk up a whole onion, then add them both to the pile of bacon in the pan. Cook on medium heat or slightly over.
I dug around in the fridge for other items to add and found some green onions and an orange bell pepper
Chop those up and set them aside. You will want to wait until the last few minutes of cooking so they still maintain their crunch.
It’s time for the eggs. If you have a blender, which most do, throw your eggs in that to whip them up. Rather than giving yourself eggsbeat elbow.
Always throw a little milk in with your eggs.
Now here is the key to a good Scrambler.
Cook your eggs in a separate pan.
This lets you keep the eggs big and fluffy. I have found cooking the eggs in the same pan, the pieces of egg are super small.
While the eggs are cooking add your veggies.
When the eggs are still slightly moist add them to the big pan of goodness
Mix the eggs in and add a nice layer of cheddar cheese on top.
My daughter loves cheese, my son, not so much. That’s is the reason for the half and half.
Pull from heat and cover to get the cheese to melt.

Milk makes scrambled eggs awesome. Love the recipes. We use this one a lot in our house. Great post buddy. 👍🏼👍🏼
I like to throw some sausage in with it, extra meaty!! But I didn’t have any thawed out😢 if the kids weren’t eating it I would throw a bunch of spinach in it and cook it down a bit. 🤤🤤

How long does the bacon and potato pan need to cook for?
About 10 minutes or you can Test the potatoes, I like to cook on a higher temp to try and get the potatoes to brown up on the sides. But if there is too much bacon grease, it’s hard to get them to brown up.
Will the bacon cook about as quickly as the potatoes?
No it won’t. That’s why I cook the bacon about half way before I put in the potatoes.
