I am changing my eating habits since the beginning of this month by eating gluten free food, well, not so gluten free, but no flour/wheat products to see how I feel, so I'm looking for healthy dishes like yours to get more ideas, so I really appreciate you sharing this amazing dish.

Good luck with your new diet, I hope it works out well for you. When I started my gluten-free experiment the easiest thing was to replace regular bread with rice cakes. Then I slowly discovered the gluten-free alternatives to pasta, flour for pizza and other stuff like that.
