I am back with another recipe for a delicious and beautiful dessert perfectly fit for a (dinner) party.
This recipe is pretty easy but looks great and is super delicious! It has champagne in it, so is only fit for adults :)
This is what it looks like:
To make the mini meringues:
Take 5 egg whites in a clean bowl and whisk them until stiff peaks, then slowly add 375 grams of white caster sugar (spoon by spoon) in and whisk after every spoon for about 20 seconds. This is a lengthy process but will help your meringues get very light and silky smooth. after you add all the sugar, whisk for an additional 30 seconds until the meringue is very stiff. Use a piping bag to make perfect little cones on a baking sheet lined with baking paper.
Preheat the oven to 130 degrees Celsius or roughly 270 degrees Fahrenheit. Then when you put your meringues in the oven turn it back to 110 and let it bake for roughly 15 to 20 minutes or until done to your liking. Longer will make the meringue more dry and shorter makes it stickier.
To make the champagne and forest fruits mousse. Whisk 250 ml whipping cream and 50 grams of sugar to soft peaks. Then in a food processor, put 300 grams of fresh or frozen forest fruit (your favorites) and blitz them until smooth. First add a little bit of this mixture to the bowl with the whipped cream and use a spatula to mix them together and then add the rest of the forest fruit mixture. Then add 250 to 300 ml of good quality champagne and adjust the acidity with a little bit of sugar if it is to sour. The acidity can vary because of the fruits that may be a little sour but also the champagne has different levels of sweetness and acidity.
Put the champagne and forest fruit mousse in the bottom of a glass and top them with the meringue (make sure you let the meringue cool down for at least 15 minutes!) and place a little mint leave on top. And you are ready to enjoy!
I love to present this on a big board and add the leftover meringue in and around the glasses. This makes it look extra pretty!
