Hi guys! For lunch today, I whipped up a super delicious vegan keto meal! No, your eyes aren't deceiving you... that is NOT rice! It's actually cauliflower "rice." Using this cruciferous vegetable (aka snowy trees, lol) is commonly used by many ketomanics as a substitute for rice and grains! It contains little carbs (only 5g per cup) and is high in vitamin C and vitamin K!
I also added a protein stirfry with 1 block of tempeh, 1 clove garlic, and 1/2 an onion. Those greens you spot are an incredible mix I got from a local organic supplier! It even includes microgreens! SCORE!
And to topped it all off I made a dressing with tahini, lemon juice, mustard, Himalayan salt, and water!
I'm so inspired to make more bowls like this! If you any ideas for other ingredients let me know!!! :)
