For this post I want to take you back aways' to New Year's Day 2017.
It was a crisp, cold day with air temperatures in the mid-20's F. & very little wind: perfect conditions for running my charcoal smoker.
I seasoned up some pork butt and when the smoker was ready, placed it on the bottom rack.
I had brined some turkey wings & put those on the top rack.
Here's how they looked when they were done about 6 hours later on the turkey wings & about 8 on the pork butt.
