Ketogenic Vegetarian Halloumi Cheese Salad with Tzatziki dressing. Great option for lunch!

Hello Steemians,

Since autumn last year I try to follow a #ketogenic diet, for #weight loss but also for other health reasons.
So I'm gonna post some of my vegetarian ketogenic recipes from time to time.

Today I want to share with you my recent recipe.
This is an amazingly tasty, fresh and quick to make #vegetarian salad with greek #halloumi cheese and #tzatziki dressing.

Great option for lunch, dinner, breakfast or whenever you like. I think it could be also great for the barbecue in the summer.
Preparation takes less than 30 minutes.

Ingredients (makes 2 servings):

  • 1 piece halloumi cheese (225 g)
  • salad mix (200 g)
  • 1 cup organic yoghurt natural flavour (150 g)
  • 1 small cucumber (70 g)
  • 2 garlic cloves
  • 1 small tomato (70 g) or a few cherry tomatoes
  • 2 Tbsp Extra Virgin Olive oil
  • 6 quail eggs (If you cannot buy it you can also use chicken eggs)
  • 1 big Tbsp Coconut Oil (for frying)

Calories and macro nutrients per 1 serving (estimated with MyFitnessPal app) :
667 kcal
Fats - 54,9 g - 75%
Protein - 35,9 g - 22%
Carbohydrates - 5,7 g - 3%

How to do step by step:

  1. First boil the water for eggs.

  2. Put the quail eggs in the water and cook them for 5 minutes (hard-boiled eggs). After that time put them into cold water to chill.

  3. Put the yoghurt into some bowl, peel the garlic cloves and cucumber.

  4. Mix everything, yoghurt, garlic and grated cucumber. This is your tzatziki dressing for the salad. Add a pinch of salt to taste. I used himalayan pink salt.

  5. Chop the tomatoes and peel off the eggs.

  6. Place the fresh salad mix into bowls and pour it with tztatziki dressing and olive oil. Mix everything together.

  7. Cut the halloumi cheese into slices.

  8. Melt the 1 big Tbsp of coconut oil on the hot pan.

  9. Place the halloumi slices into the pan. Change the side when they get some gold color.

  10. And fry them until they have nice and brown color and crispy texture if you like.

  11. When the halloumi is ready place it on the top of the tztatziki salad.

It may not look like but it's really tasty. I bought all the ingredients in Lild market, but I think you can buy halloumi cheese in any european market or some stores with Greek kitchen.

CAUTION: There is not much of garlic, but be aware of it and consider eating this salad if you are going for your first date after that (the smell could be not good for kissing). :)
