First thing you need for 99% of Persian foods are Rice and Safran. these 2 are the bases of most of our foods, today i wanna teach you one the easiest and most delicious Persian food.
Sabzi Polo ba Mahi ( Herb rice with Fish )
We it this food traditionally for the Persian new year Norouz,
I will write about all the Persian new year and stuff later too so lets make it short and go to how we can make this food fast and easy.
What we need ?
2 Cups long grain rice (Basmati rice)
3 Pieces Tilapia fish fillet, or a fish of your choice
¼ Cups chopped dill, fresh or dried
¼ Cups chopped chives or scallions
¼ Cups chopped parsley
¼ Cups chopped coriander (cilantro)
1 Teaspoon turmeric
½ Teaspoons black pepper
salt
1 Tablespoon fish spice
½ Teaspoons ground saffron dissolved into 4 tablespoons hot water
3 Tablespoons lemon juice
2 Tablespoons butter
vegetable oil
First step :
We need a large non-stick pot, we need to add 5 cups of water to a boil . then we add rice and pour into boiling water. add a spoon of salt ( normal Table spoon ) .bring water back to a boil. After 6 minutes we test the rice( it should e soft out side and hard inside )
Step 2 :
Drain the rice using a colander and rinse with cool water.
Step 3 :
now we need to add chopped herbs to the rice and mix it all together ( do it soft to dont break the rice )
Step 4 :
now add oil in the pot , put the mixed rice back in the pot,now lower the Heat, make 3 hole in the middle of the rice to steam can go all inside the rice, add a butter on the top of the rice. ( i always say more is always better ) now just let it for 45or 50 minutes on the low heat
Step 5 :
now just make your fish as you like, i always put it in the oil and i add some lemon and.... fish is depend on you that how you wanna have it.
Step 6 :
Add Safran in the hot boiling water, and add 5 spoon of that Safran water to rice and 3 spoon to the fish .
Finish :
now you just need to add rice in a dish and put the fish next to it.
