Oh wow, cringe memory coming in. I was probably 10 and had to bring a family recipe in for school. Forgot to ask my dad for a recipe so I busted out the ole Betty Crocker and slapped the Wellington recipe on my homework. My teacher probably thought wtf, this broke ass family ain’t making beef Wellington on the reg. Ugh.
Same. Every season you'd hear, "the Beef Wellington is raw!" "These scallops are like rubber!!!" And them fucking up the risotto.

I've always wanted to try one of these, but I absolutely hate anything soggy and I'm worried that outer crust would sog up with meat juice. Yours looks delicious. Maybe I'll try one after all! :)
They say to help prevent that, you would lay a piece of the crust at the bottom before you roll it, so that bottom has a double layer of crust. And believe waiting to cut it is most important, to let the meat set where if you cut it immediately, all those juices will just come right out.
You also need to ensure you cook down the duxelles enough. If you don't, tons of moisture from the mushrooms will come out and soak into your puff pastry.
