Chocolate cake is one of my baking passions. And everybody loves it.
Today is raining here in the country side where I live. My baby girl's sleeping so it's a very good chance to bake some chocolate cake! Yay yay yay!!!
This recipe is very easy, everyone can do it and it's less messy than ever.
Baking is a good activity when you want to have a bonding time your children. Let's see what ingredients we need to prepare it.
1 cup all plain flour
1 cup sugar
1/4 cup cocoa powder
1/2 cup of full fat milk or low fat milk or butter milk or coconut milk or almond milk.
1/4 cup of malted butter or coconut oil or vegetable oil
1 large egg
1 tsp baking soda
1/2 tsp baking powder
1 tsp vanilla extract
pinch of salt
1/2 cup of very hot water or very hot coffee
Instructions:
Preheat oven 350F/175C. Coat 7" x 7" square cake pan. Coated with butter and parchment paper.
In big mixing bowl. Mix all the dry ingredients together, flour, sugar, cocoa powder, baking soda, baking powder and salt. Whisk them well. Then add the wet ingredients, egg, milk, butter or oil, vanilla extract. Mix until it well combine.
Add 1/2 cup of hot water or hot coffee. Mix again until well combine. The batter will be quite thin but not too liquid.
Pour the batter in prepared cake pan. Bake for 20-30 mins depends on your oven. My oven takes about 20 mins.
Take the cake out wait until it cool completely.
In the meantime let's make the frosting.
I made a very simple chocolate ganach.
1/2 cup of dark chocolate chips
1/2 cup of heavy cream
Heat up heavy cream, bring it to boil. Take it off the heat.
Add 1/2 cup of dark chocolate chips stir until well combine.
Let it cool down until the frosting reach the consistency you desire.
Spread it on your cake. Chill in the fridge about 30 mins.
Cut the cake into small square pieces, decorated with any topping you love.
This cake is very moist and sweet. You can reduce the amount of sugar if you find it might be too sweet.
