Chicken Menudo

Today, I cooked a dish called Filipino Afritada, turned out tastes like Menudo. Yes, you read it right!
This might be the simplest recipe of Filipino Afritada, but for sure it is tasty, taste like Filipino traditional food. Food may not be luxurious and expensive as long as it is tasty and mouth watering, solve! That’s the Filipino style. Simple but yummy!

These are the ingredients:

2 pieces of chicken breast cut into serving pieces
1 medium onion, minced
2 teaspoon minced garlic
1 Knorr chicken cube
2 ripe tomatoes (if tomato paste is not available)
2 small potato cut in cube
1 large carrot cut in cube
1 teaspoon of sugar
3 tablespoons cooking oil
2 pinch of salt
1 piece red bell pepper
1 teaspoon cornstarch
2 tablespoon tomato ketchup
*(Chicken broth is optional, add boiled water)

Procedure

  1. Heat the cooking oil
  2. Saute the onion and garlic
  3. Add chicken slices, continue to saute until it gets brown.
  4. Add the Knorr chicken cube, and boiled water, still and let it boil; add sugar and a pinch of salt. Cover the pot and let it boil, adjust the heat. Cook for 30 minutes.
  5. Add potato and carrot. Stir, and continue to cook for 10 minutes.
  6. Serve in a bowl and enjoy!

The side dish I cooked is sautéed Sardines.
The money I spent for this in Philippine currency is 100 pesos convert to dollar is $2. Cheap but tasty! Try it at home too. Enjoy! 
