Easy, Inexpensive and TAsTy ! Chicken Quesadillas.

Easy Dinner that no one complains about = WiNNiNG!

As most of you are already aware, I have a large family. Trying to find something to cook that everyone likes is very difficult indeed. One of my sons hates all pasta and rice, like how is that even possible? Are your taste buds broken? My boyfriend does not like chicken, so there are very few chicken based meals he will eat, this being one of them.

Chicken Quesadillas

  • 3 lbs of chicken baked in 1 stick of butter at 350 degrees for approximately 1.5 hours (shredded)
  • Any kind of cooking spray (I used canola)
  • Approximately 12 flour tortillas (I use the burrito size, but any size will do)
  • About 1 pound of shredded cheese (I use mild cheddar)
  • Sour Cream and Salsa for dipping

Step 1: Bake and Shred chicken.

This is the easiest way to shred chicken, if this the only thing you learn from this post, you will thank me.

Step 2: Spray a metal frying pan big enough to accommodate your tortilla with your preferred spray. Turn on the burner to a medium setting.

Step 3: put a tortilla in the pan, layer cheese, chicken, cheese and then a second tortilla. Cook each side for approximately 1 and a half minutes.

Step 4: Cut up Quesadilla, I use a pizza cutter, but anything sharp will work :)

That is it! It is that easy, they are very filling and can be customized to your liking, I have used steak instead, added refried beans and will sometimes throw some fresh veggies in.

What a great tip on shreading the chichen, you must really boil it soft, oh and when this baby comes out of the oven. Piping hot, I bet this is lovely for all my taste buds that live for fine Mexican like this!
