Sunomono, A Simple and Refreshing Salad

Sunomono, or Cucumber Salad, is an easy to make compliment to many meals. It's pictured here next to my Chicken Katsu (a recipe for another day). Here's the recipe:

Ingredients: 2 English cucumbers (I use "hothouse cucumbers" from Whole Foods), 2 tbsp rice vinegar, 1 tsp sesame oil, 1 tsp soy sauce (I use low sodium because I add salt for taste), 1 tsp sugar, 1/4 tsp salt, and 1 tbsp toasted sesame seeds.

Directions: Wash the cucumber (even if it's organic), peel it, and slice it into thin slices. Mix all the other ingredients except the sesame seeds, and pour the dressing over the cucumbers. Let the salad sit for 10-15 minutes and then drain the liquid. Separate into individual bowls and top each with a sprinkle of toasted sesame seeds.

That looks really good.

Except for trying to get the cucumber slices thin and not burning the sesame seeds while toasting them, it's easy to make ;-)
